This month the Creative Cookie exchange have planned cookies with pumpkin. I am hoping to be read with the post well in advance to avoid disappointment and not to miss the dead line 🙂 I am glad I am actually ready with the bake, photos and now am here typing the recipe.
Pumpkin I must confess is not a favourite in my kitchen. I love it in savoury form either as a curry or a raita. However, with the challenge, I thought I might have hide and pair it with other things so that my boys don’t get to know. On top I used mascarpone cheese to frost! We had them for tea this afternoon and I must say we all loved it. Next time I wish to add more of pumpkin puree to the measures of other ingredients. Since pumpkin is sweet, I may be able to cut down on the sugar and the cookie will be sweetened naturally.
I used one of my old recipes from the blog. This cookie does not form a proper dough. One needs to roll and flatten it slightly as the dough has a good moisture in it.
150g plain flour
50g semolina
100g butter
100g sugar
50g rolled oats roasted and ground
1/4 cup Pumpkin puree
100g mawa(or milk solids)
ground nutmeg(if you like)
cinnamon powder
Baking powder 1/2 tsp
pinch of salt
Milk to form the dough
For the frosting:
Mascarponi cheese
Icing sugar
Cinnamon powder
Rolled oats
Toasted nuts of your choice(I used sunflower seeds)
Baking:
Combine the dry ingredients(except sugar) and mix all together. Add in butter,mawa(milk solids) and pumpkin puree in a pan. Cook together to make a halwa. When cool, add this halwa to the dry ingredients. Mix well. If needed use milk to make a dough. Wrap this dough and keep it aside for 3-4 hours. Bash this dough with a pestle/rolling pin. It is kind of sticky but comes together when you grease your palms with oil. Roll the dough and cut different shapes of your choice or roll into small balls. Place these on a greased baking sheet. Bake in a preheated oven at 175 degrees for about 10 mins.
Mix mascarpone cheese with some icing sugar to a tad sweet taste. Spread on each cooled cookie and sprinkle some cinnamon powder, oats and nuts.
