Nachos is a Mexican dish plated with Tortilla chips, cheese sauce, sliced jalapenos and dips like salsa and guacamole. My son absolutely loves it. For every trip to the cinema he has a tray of nachos to munch through the movie! I had a pack of thalipeeth bhajni in my pantry. Thalipeeth is enjoyed by all home too. I thought I will pat out some thalipeeth during the weekends. I wanted to bake some biscuits and snacks for the holidays. This is the time when he looks for something in the kitchen cupboards to snack and ends up eating junk. I though of some savoury biscuits with the bhajni I had.
The whole preparation needs arranging with the chips, dips of yoghurt, tamarind chutney, chopped onions, tomatoes, coriander, crushed peanuts chutney(danyachi chutney) and a dash of limejuice!
For this one needs the flour mix of bhajni. Bhajni for thalipeeth is usually prepared all in advance by the ladies during summer. When the household needs some snacks or quick meals, this bhaajni is quite hand. I procure mine from India. The flour is a mix of roasted and finely ground pearl millet(4 cups), sorghum(2 cups), urad daal(1 cup), chana daal(1 cup) rice grains 1/2 cup. Some add a few spices namely cumin seeds and corainder seeds.
If one hasn’t got an access to bhaajni, a mix of jawar flour, rice flour and chickpea flour(besan) and wheat flour will do the job.
For the chips :
I had 2 cups of bhajni peeth. To this I added
1 tsp of red chilli powder
1 tsp of turmeric
1 tsp of carrom seeds
chaat masala to sprinkle
salt to taste.
Water to make the dough
In a bowl, mix all the ingredients(apart from chaat masala) and make a dough with water. Use a small part of the dough. Roll out on a flat surface to make to a thickness desired for the chips(ideally as thin as possible). Preheat oven to 180C fan/gas 6. grease the baking sheet with oil, then cut dough into triangles with a pizza cutter or a sharp knife. Arrange in a single layer on 1 or 2 baking sheets and bake for 15-20 mins or until done. Remove, sprinkle with chaat masala and set aside.
For the dip:
1 cup of greek yoghurt
2 tsp of thecha
salt for seasoning
In a bowl mix the thecha with the yoghurt and garnish with coriander
To arrange the nachos:
In a plate arrange the chips. Add a dollop of the dips of yoghurt and tamarind date chutney, chopped onions, tomatoes, coriander, crushed peanuts chutney(danyachi chutney) and a dash of limejuice! I wish I had a better photograph to show the whole arrangement..but it was so morish that no one could resist!!
It is a perfect snack when socialising too…filling and packed with nutrition!
