Tonight I am a bit relaxed and look forward to a break when I can find some family time. This is the time when my family comes together for the moments to cherish later. We have our favourite things to do during these holidays. My son who has taken a liking towards cooking. He likes to make his favourite chicken recipe on every occasion he can grab.
P likes to use chicken drumsticks for his creation:
For this he used 6-7 chicken drumsticks
Barbeque sauce 1/2 cup
Olive oil 1 tbsp
Salt 1 tsp
Black Pepper freshly crushed 1 tsp
Dark brown sugar 1 tbsp
Method: Wash and clean the drumsticks. Using a knife, cut through the flesh to allow the marinade to soak in.
Mix together all the ingredients and marinade the chicken drumsticks. P loves to place each marinaded piece in a plastic bag and refridgerates it overnight.
In preheated oven, place the chicken and roast at 200 degrees for 15 mins. Bring them out and coat each of them with the marinade again and place them back into the oven.
Let it cook in the oven for another 15 mins and recoat with the sauce and place it back in the oven(yes, he has the patience to do this again and again!! I wish he uses all his patience to study at times :)))
By the time these drumsticks get coated 3-4 times, they get nicely caramelised on top and done.
What I like is the way, he served it to us with the foils around the ends. Till date P has prepared these 4 times on his own. The picture I have posted with this write up is when he made them, when we had his English class mate and his family for dinner. I must say, I am proud of my son:)
