Cecina: Baked chickpea pancake


Here is the story about Cecina, a Tuscany bread..kind of savoury pancake that it was a Eureka when a bag of chickpea flour got soaked in a storm on a ship. Instead of throwing it away they added oil and cooked it and invented a bread called Cecina!!!

All it needs is :

1 cup of chickpea flour

2 cups of water

2 tblsp of olive oil

salt and pepper to taste

And of course!! a hot oven!!

I added some chopped peppers and dried herbs. You may experiment using chopped onions.

Method:

Mix in the flour and water. Add in 1 tbsp of oil and set aside for couple of hours. Pour this batter in a small pan, add the rest of the oil and place in a preheated oven and bake at high temperature ..mine was 300 degrees. I added the chopped peppers and herbs. Bake till set and cooked.
