Smoked Chaas(buttermilk)

Last day we had our Kulchas’ with smoked buttermilk. This again I had watched and tasted at a dhaba in India. I had all my minds to prepare this at home. After a year of my trip down to homeland, I recalled about it and here it is for you all. I am sure you all enjoy it and let me know your feedbacks.

You will need

1 cup of thick yoghurt

3/4 cup water(cold)

1/2 tsp ground cumin

1/2 tsp coriander

1/2 tsp black salt

1/2 tsp black pepper

salt and sugar for seasoning

A pinch Hing(Asoefitida)

1 tsp Ginger-Green chillies paste

1 tsp Ghee

Cumin, Carom seeds 1/2 tsp

1 clove

1 cup of thick yoghurt churned with 3/4 cup cold water.This is spiced with ginger-green chillies paste. To this add 1/2 tsp each of ground cumin, coriander, black salt, black pepper, salt and sugar for seasoning. Add in a pinch of hing(Asoefitida)

Light a piece of charcoal. Place the charcoal in a thick bottom vessel.

To this add cumin seeds,carom seeds, 1 clove and quickly add about 1/2 tsp  of ghee.

As soon as the smoke develops, turn a glass of the same size you are going to serve the chaas in.

Unturn it and pour in the ready chaas. Pour it back and forth and serve. You may garnish with coriander if you like. We thoroughly loved the lightly smoky flavours imbibed by the buttermilk!!

    1. Yes, Sawsan..this is a unique way I watched at a place in India where they serve roadside food:) This I believe is prevalent in Rajasthan and Gujarat area of India.
