Baked Alu Kofta Curry(Potato balls Curry)


Baking has overpowered my imagination now. Last but one bake and I am not sure what will I do when Bake-A-thon gets over. I need another theme to keep me motivated and my blog active….need suggestions!!!With a few guests expected today, I decided on kofta curry, especially with baked koftas’.

For the koftas’ you will need

5 medium sized potatoes

2 tsp ginger-garlic paste

1 tsp  dried fenugreek or chopped coriander

2 tsp cornflour

1.5 tsp of garam masala

Salt to taste

few raisins to stuff in(you may add in cashews or blanched almonds as well)

Boil and mash the potatoes. Add in rest of the ingredients and mix in. Make small bite sized balls. Stuff in the raisins. Line a baking sheet and bake in a preheated oven at 180 degrees Celcius. Roll the koftas’ if one side is baked golden brown and the other needs to be baked.  Cool when done.

Curry

2 Onions chopped

4 tomatoes chopped

2 tsp Ginger-garlic paste

1 tbsp Oil

1 tsp turmeric

1 tsp chilli powder

1 tsp Garam masala

1 tsp cumin powder

1 tsp coriander powder

1 tsp Cumin seeds for tempering

Salt to taste

Bay leaf, cinnamon stick couple of small pieces

Chopped coriander for garnishing

1 tbsp of cream

Grind onion, tomatoes separately. Heat the oil in a large pan. Add the cumin seeds for tempering. Add in the bay leaves and cinnamon sticks. Mix in the onion paste, followed by tomato paste and ginger-garlic paste. Stir each ground mix for couple of minutes before adding in the other. Add turmeric powder. Cook this mixture till done. Normally you see oil on the sides of the masala(ground paste) when done. Add in the chilli powder, cumin powder and coriander powder and garam masala.  Add in warm water to manage the consistency. Add in the salt and cook for 5 mins.

Putting it together:

Place the baked kofta in a platter. Pour the curry over these just before serving(or else the koftas’ will absorb most of the curry) You may reheat the preparationin the microwave for 5 mins. Garnish with chopped coriander and drizzle the cream. Enjoy this with jeera-rice/naan/roti
